Yummy Cauliflower Soup
Made some really yummy cauliflower soup for dinner, it is gluten, dairy, egg and nut free, is easy to cook and tastes delicious, great for the still cooler nights. Here is the recipe for you to try.
3 tablespoon of olive oil approximately
1 x onion diced
3 cloves garlic crushed
¾ of a large cauliflower cut into florets
3 medium sized potatoes cut into 2 cm dice
sea salt and cracked pepper for seasoning
2 cups of chicken stock
130mL coconut cream
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
Heat 1 tablespoon of olive oil in a saucepan, add onion and 2 of the crushed garlic cloves and cook until softened, add in ¾ of the cauliflower, all of the potato, chicken stock, salt and pepper to season and cook until cauli and potato are cooked, add in coconut cream, and blend up with a stick mixer, reheat the soup if necessary. In another pan heat two tablespoons of olive oil, add in the rest of the garlic, coriander and cumin seeds and stir for a minute add in the remaining cauli florets, you may want to cut them a bit smaller for this part, and stir fry until cooked, add on to the top of the soup when serving.
