walnut and zucchini bread

Just because you have a Food Intolerance, does not mean you can’t eat cake. Recently I was at the Eveleigh Market here in Sydney which is a great organic market, and I tried some of the Walnut and Zucchini Bread from BirdCowFish, it was so yummy I decided that I had to experiment with some recipes to achieve the taste, this was the first recipe and first try and it is just as good as the original.

This recipe will make 2 loaves.

You will need;

3 cups of spelt flour
1 1/2 tsp of ground cinnamon
1 tsp bicarb soda
1 tsp sea salt
1/4 tsp baking powder
3 eggs
2 cups raw sugar
1 cup of olive oil
1 tsp vanilla essence
2 zucchinis grated
1 cup of chopped walnuts

You need to mix together the flour, cinnamon, bicarb, salt and baking powder.
Beat eggs well and slowly add in the sugar and oil whilst still beating with a whisk, add in vanilla.Mix together the wet and dry ingredients, add in the zucchini and walnuts and stir until just combined. Pour or spoon into 2 loaf tins lined with baking paper. Cook for approximately 1 hour on 180 degrees.

You could easily change the flour if spelt is not good for you due to a gluten intolerance. You will notice that the recipe does contain a lot of sugar, one of my clients has made this recipe with half of the sugar indicated and he said it tasted just as good.
