Serves 2


1 Tablespoon olive oil
2 teaspoons of red curry paste*
300g ling or other white flesh fish
135mL coconut milk
¼ teaspoon fish sauce
½ teaspoon sugar

Heat olive oil in a non-stick pan, add red curry paste and stir for 30 seconds, add rest of ingredients except the fish and stir to mix well, when all ingredients are mixed well, add the fish and cook until fish is cooked, should take between five to ten minutes, serve with rice if allowed, and a side salad or Asian green vegetables

* The best brand is Mae Ploy, it is available in Asian Grocery store
