Here is a recipe suitable for most people that have Food Intolerance’s, it is also easy, tasty and one that can be prepared in advance. You can also change the ingredients around, swap the baby beets for sun dried tomatoes, add in some four bean mix, use rice instead of quinoa, the possibilities are endless.
1 x cup tri – coloured quinoa rinsed
2 x cups of water
50 grams of baby spinach leaves
1 x carrot julienned
½ red onion finely sliced
3 x tablespoons of chopped coriander
6 x baby beetroots
50 grams of goats feta
Cook quinoa in water until cooked, then cool, put the rest of the ingredients in a bowl and add in the cooled quinoa, mix and dress as desired with salad dressing, this salad will last for about a week in the fridge undressed, the best thing to do is just dress it as you need to.
