prawn salad with cannellini beans

Serves 2

1 kg cooked prawns peeled
1 x 400 gram can of cannellini beans rinsed and drained
¼ of a butter lettuce torn up into bite size pieces
1 x avocado cut into 1cm squares

Coriander and lemon dressing;

½ bunch coriander chopped
1 x long green chilli chopped
Juice of 1 lemon
1 tablespoon of olive oil
1 tablespoon of rice wine vinegar or sherry if rice is a problem

Combine prawns, beans, lettuce pieces and avocado in a bowl, put all ingredients of dressing into a food processor and mix, then add dressing to prawn mixture and serve.
