prawn salad with apple, orange and fennel

Serves 2

Ingredients

16 medium green prawns peeled
1 lemon zested
¼ teaspoon diced red chilli
2 tabs olive oil

Vinaigrette

1 tabs Dijon mustard
1/3 cup olive oil
2 tabs honey
1 tabs red wine vinegar
2 tabs lemon juice
½ lemon zested

Salad

½ bunch celery finely sliced
2 small fennel bulbs finely sliced
2 oranges peeled and cut into pieces
2 granny smith apples cut into matchsticks
1 cup roughly chopped parsley

Preparation

Place prawns in a bowl with lemon zest, chilli and olive oil and marinate while preparing vinaigrette and salad, whisk together all of the vinaigrette ingredients and set aside, put all of the salad ingredients together and toss with half of the vinaigrette, heat pan and cook prawns, serve the prawns on top of the salad then pour other half of vinaigrette over the prawns.
A great entrée or very light dinner or lunch
