4 x pieces shortcut bacon sliced into strips
2 tablespoons of peanut oil
1 x pork fillet, approximately 500grams
1 x large onion sliced thinly
¼ cup of madras curry paste
230 grams of green beans
1 tablespoon of tomato paste
Stir fry bacon in wok or non-stick pan until crispy, remove from pan and put aside, heat ¼ of the oil in the wok or pan and add in approximately ¼ of the onion and pork and stir fry until brown, repeat with remaining oil, pork and onion, adding each batch when browned to the bacon. Add remainder of oil to pan and gently stir fry the madras curry paste until fragrant, then return bacon, pork and onion to pan, add in tomato paste and beans and stir fry for a few minutes.
