Pomegranate quinoa and goat cheese salad

Serves 2

100 grams of quinoa – cook as per directions on packet and cool

1/2 red onion finely diced

60 grams of sultanas

50 grams of goat cheese crumbled

pearls/seeds or fruit from 1 x Pomegranate – to get the seeds out cut the fruit in half and very firmly tap the outside of the skin with a wooden spoon

40 grams of pine nuts

2 tablespoons each of chopped coriander, mint and flat leaf parsley roughly chopped

1 x tablespoon of olive oil

juice of 1/2 lemon

Mix all ingredients together and enjoy
