Paleo Pumpkin Breakfast Muffins

Makes 8

1/2 cup coconut flour
1 teaspoon of baking powder
½ teaspoon bicarb soda
1 teaspoon of cinnamon
¼ teaspoon of allspice
pinch of salt
4 eggs
2/3 cup mashed pumpkin
1 teaspoon of vanilla essence
½ cup of coconut oil melted
6 tablespoons of maple syrup
¼ cup of chopped walnuts
¼ cup of sunflower kernels

Preheat oven to 180 degrees, cut up 8 pieces of baking paper into 150mm x 150mm squares, use these to line the muffin tin to hold the mixture, if desired. Mix all dry ingredients (except sunflower kernels) together in a bowl, in a separate bowl mix all wet ingredients together, mix both the wet and dry ingredients together, mix until there are no lumps at all. Spoon prepared mixture into muffin tins to cook, sprinkle the sunflower kernels onto the top of the muffins then pop into the oven to cook, they take approximately 20 minutes to cook.
