Orange and fennel chicken
If you are looking for an easy wheat free, dairy free and egg free recipe that is tasty, give this a try, it has been adapted from a donna hay recipe in fresh and light.
1/4 cup orange juice – I used a fresh orange and juiced it
1 tablespoon of honey
1 teaspoon of fennel seeds
1 tablespoon of olive oil
1 tablespoon of lemon juice
1 x clove garlic sliced
750 grams of chicken thigh fillets cut in half
Mix all of the ingredients together, marinate for a half hour if you have the time, otherwise put everything into a pan and cook, serve with a salad or veggies.
