Lushy Bircher Muesli
Here is the recipe for a Bircher Muesli, it is really lushy, and if you are having a Father’s Day brunch, it is definitely a great addition to the menu, I made a quinoa version and an oat version, so you can vary it according to your intolerances. The quinoa version feedback this morning was “this is really good isn’t it”
150 grams of organic rolled oats or quinoa flakes
300mL of cloudy apple juice
200mL of coconut milk
2 ripe bananas
2 tablespoons of honey
1 x vanilla bean* or ½ teaspoon of vanilla paste
1 x lemon**
1 x tablespoon brown sugar
1 granny smith apple
1 x red apple cut into shoestring strips
2 x passion fruit
30 g pumpkin seeds
30 g sunflower seeds
15 g sesame seeds
Combine the oats or quinoa with the apple juice and coconut milk, mash the banana with a fork in a separate bowl, add the honey, vanilla bean paste or seeds, brown sugar, lemon zest and lemon juice, mix well and combine with the oat or quinoa mixture. Refrigerate overnight. When ready to serve grate up the granny smith apple with the skin on and put into the muesli, at this stage you can add more coconut milk or sugar to taste, although I never have had the need to.
Put into serving bowls and put the red apple on the top, then the pulp of half a passion fruit, combine the pumpkin, sunflower and sesame seeds together and sprinkle them on the top.
If you like texture in your muesli then the oats are great as the quinoa mixture is quite smooth, although you could alter this by adding in some cooked whole quinoa, maybe half flakes and half whole quinoa.
*if you are using a vanilla bean cut it in half and scrape the seeds from it with a sharp knife
** you will need the zest from the full lemon and the juice from only half the lemon, zest the lemon before cutting it in half and juicing it
