This recipe has been adapted from Jane Grovers Naked Foods, it is wheat free and a1 dairy free. You can serve them with a side salad, or have them on some gluten free bread as a sandwich for lunch.
750 grams of sweet potato, peeled and cut into 1cm dice
2 tbsp olive oil
3/4 cup red lentils
1 tbsp extra virgin olive oil
1 onion finely diced
2 garlic cloves crushed
1 tsp ground cumin
1 cup vegetable stock
1 red chilli finely sliced
1 bunch coriander finely chopped including stalks
6 green shallots roughly sliced
2 eggs lightly beaten
1 cup cooked brown rice
1 cup spelt flour
1 cup of oats
Preheat oven to 200 degrees, toss the sweet potato with half the olive oil and roast until cooked.
Heat the extra virgin olive oil in a pan and cook the onions garlic and cumin powder until soft, add washed lentils and vegetable stock and cook until lentils are tender and mix is thick,
Combine all ingredients together and mix well, form into patties and cook until golden on both sides, I usually cook them on a bbq.
