Garam Masala Chicken

I am in love with Marion Grasby’s cookbook “Asia Express 100 Fast and Easy Favourites” I have cooked three recipes from it this week, each of them have been really easy to make and taste great, and are perfect if you have a Food Intolerance, here is the second recipe “Garam Masala Chicken” for the third recipe you will need to sign up for my newsletter that will go out next week, the recipe will be in the newsletter, you can do that here on my website.

Garam Masala Chicken

500 grams of chicken thigh fillets beaten to about 5mm thick-like a snitzel thickness
2 tablespoons of vegetable oil
Mango Chutney and lemon wedges to serve

Marinade;
2 tablespoons of garam masala
1 tablespoon of paprika
¼ teaspoon of turmeric
1 teaspoon of sea salt
2 garlic cloves crushed
¼ cup finely chopped coriander
¼ cup natural yoghurt

Mix all marinade ingredients together, add chicken pieces and leave for five minutes. Heat oil in pan to a gentle heat, add chicken and cook until done, it is important not too have the heat too high for the pan as the spices will burn before the chicken is cooked, when cooked serve with your preferred side dish of salad, and the mango chutney and lemon.
