Fresh figs have such a limited season, so when I see them this is the first thing I make;
40 grams of baby rocket
3 fresh figs sliced into quarters
45 grams of goats cheese or chevre broken up into small pieces
1 teaspoon of seeded mustard
2 teaspoons of honey
1 tablespoon of olive oil
Toss together the rocket, figs and goats cheese, mix the dressing ingredients together and pour over the salad, serve immediately.
