Crispy Skin Salmon with Caper Dressing

Here is a really nice salmon dinner for you, we had it ourselves tonight, and have often enjoyed it with all of the family including the little ones and they love it as well. I have adapted the original recipe slightly, the original recipe comes from my favourite vinegar providore, Pukara Estate.

Crispy Skin Salmon with Caper Dressing

2 salmon fillets
olive oil

Caper Dressing;
80mL white wine vinegar
80 mL olive oil

1 tablespoon of palm sugar
2 cloves of garlic finely diced or crushed
2 tablespoons of capers roughly chopped
4 tablespoons of finely chopped parsley
1 tablespoon of chopped dill

mix together all ingredients for caper dressing and set aside

spread a little olive oil on the salmon fillets and pop onto a hot BBQ plate for a few minutes either side, rest for a few moments and then dress with dressing, there will be lots of dressing which is O.K as if you make a great side salad the dressing is there ready
