Creamy Cauliflower and Spelt Pasta

This recipe is delicious, it has been altered only slightly from the original recipe by The Australian Women’s Weekly in Eat Clean with Superfoods.

Serves 4


1 kg of cauliflower cut into florets
1 cup vegetable stock
2 cloves garlic peeled
2 tablespoons of extra virgin olive oil
¾ cup spelt breadcrumbs – you will need to make these from some spelt bread.
2 small birds eye chilli diced finely
1 clove garlic crushed extra
¼ cup chopped flat leaf parsley
grated rind of one lemon
375 grams spelt pasta
½ cup grated hard goats cheese
2 tablespoons of extra virgin olive oil extra
1 cup a2 milk
juice of 1 lemon


Place three quarters of the cauliflower, a2milk, vegetable stock, and the two cloves garlic in a saucepan on the stove, cook gently until cauliflower is cooked. Meanwhile heat oil in a pan and cook the remaining cauliflower florets until slightly golden, add breadcrumbs, chilli and extra garlic and cook until breadcrumbs are golden and crisp, remove from heat and stir in lemon rind and parsley. Cook the pasta according to the direction on the packet, drain and return to pan with grated goats cheese and extra oil, blend the cauliflower mixture and mix with the cooked pasta and cooked cauliflower and breadcrumb mix.
