chicken with kafir lime

This is a very popular dish in our house, it is commonly called turmeric chicken though.

serves 2

ingredients

2 eschalots finely chopped
1 lemon grass stalk (white part) finely chopped
3 x tablespoons of lemon juice
1 tablespoon of vegetable oil
1 tablespoon of fish sauce
1 teaspoon of turmeric
½ teaspoon of salt
½ teaspoon of white pepper
600 grams of chicken thigh fillets cut into thirds
sauce;
1 x Kaffir lime leaf finely chopped
1/5 cup water
1 tablespoon of fish sauce
2 tablespoons of sugar
1 red chilli finely chopped

preparation

Mix all of the ingredients for the chicken together, you can marinate if you like for a few hours or overnight, I never have and it tastes great, heat a small amount of oil in a non-stick pan and gently cook the chicken until done.

For the sauce, put all of the ingredients into the pan whilst the chicken is cooking and heat until sugar is dissolved, when chicken is cooked pour the sauce over the top of the chicken and serve.
