chicken with dates and honey

Serves 4

Ingredients

3 tsp cumin seeds
3 tsp coriander seeds
2 tsp fennel seeds
12 cardamon pods
1tsp black peppercorns
½ tsp sea salt
1/3 cup olive oil
2 onions finely diced
2 cloves garlic crushed
4cm piece ginger grated
1 red chilli finely chopped
½ tsp ground ginger
1 tsp turmeric
2 cinnamon quills
1kg chicken thigh fillets
2 cups or 500mL chicken stock
10 fresh dates pitted and chopped
1/3 cup of honey

Preparation

Grind up the cumin, coriander, fennel, cardamom seeds, peppercorns and salt with a mortar and pestle, heat olive oil in a heavy based saucepan, add onions and cook for two minutes, then add garlic, ginger and chilli and cook for a minute or until soft, add the spice mixture, ground ginger, turmeric and cinammon quills and cook for a minute or two until fragrant, add the chicken and cook for 5 minutes each side, reduce heat pour in stock and cook for about 30 minutes or until chicken is almost cooked, add dates and honey and cook until chicken is cooked.
Serve with fresh vegetables
