broccoli and bacon soup

Serves 2

Ingredients
500mL chicken stock
1 onion chopped
2 x tablespoons of nuttelex
½ kg broccoli flowerets or 2 x large heads of broccoli
Sea salt and cracked black pepper to taste
2 pieces of shortcut bacon
130mL coconut cream
Juice of 1 lemon
10 chives chopped

Preparation

Gently sweat the onion in the nuttelex, when soft but not brown add the broccoli flowerets, salt, pepper and chicken stock, meanwhile put the two pieces of bacon under the grill and grill until crisp and dice up, when broccoli is cooked add lemon juice, and coconut cream and blend up with a stick blender, pour into serving bowls, add bacon and chives.
