I experimented with these delicious banana fritters this morning for breakfast they are delicious, I have adapted the recipe from Quirky Cooking, you can change the fruit around and replace the banana with apple, I would as well change the spice to cinnamon if I was using apple, you can change the flour around if you cannot have gluten, you could add nuts, you can replace the oats with quinoa flakes, replace the coconut milk with a2 milk, the variations are endless. The recipe says to soak overnight, you would get away with not doing that as well.

ingredients for 12 fritters

120 grams of spelt flour

50 grams of oats

1/2 teaspoon of apple cider vinegar

1 tablespoon of honey

270 gram can of coconut milk

1 tablespoon of olive oil

1 banana diced

1 teaspoon of baking powder

1/4 teaspoon of bicarb soda

1 pinch sea salt

1/2 teaspoon nutmeg

1 egg

coconut oil for frying

maple syrup to serve

fruits of choice to serve

Place flour, oats, vinegar, honey, coconut milk and olive oil into a mixing bowl and mix until combined, leave to soak overnight at room temperature. Add banana, baking powder, bicarb soda, salt, nutmeg, and egg to the mixture and mix well. Heat some coconut oil in a pan and drop heaped tablespoons of the mixture into the heated coconut oil and cook until browned on the bottom or until the surface starts to bubble, turn over and cook the other side. Serve with desired fruits, maple syrup, nuts and even a2 cream and or ice cream.
