Banana Coconut Bread

1 cup coconut flakes
1 cup raw sugar
1 ½ cups spelt flour
1 ½ teaspoons of baking powder
2 large mashed bananas
1 cup a2 milk, this recipe was trialled with a2 milk, you can use soy or any other type
1 teaspoon of coconut essence
1 egg lightly beaten
Preheat oven to 170 degrees
Line loaf pan with glad bake or a similar product
Combine coconut, sugar, baking powder and flour in large bowl
Combine milk, essences, egg and banana in a large jug or bowl
Mix the wet ingredients with the dry ingredients
Stir to combine, and pour into loaf tin
Bake for approximately 1 hour
