Anzac Bickies

Anzac Bickies

Sometimes the oldest recipes are the easiest to convert, today I converted the Anzac Biscuit recipe from my Commonsense Cookery Cookbook that was printed in 1983, it was pretty easy all I changed was the flour and butter, and yes they are divine.

1 cup rolled oats

1 cup spelt flour

3/4 cup sugar

3/4 cup dessicated coconut

1 tablespoon of golden syrup

1/2 cup of nuttelex

1 1/2 teaspoons of bi carb soda

2 tablespoons of boiling water

Mix oats, flour, sugar and coconut together, melt syrup and nuttelex together, mix bi carb with boiling water and add to melted nuttelex and syrup then add to dry ingredients. Place tablespoons of mixture onto a baking tray and squash down a little, with a fork, bake at 150 degrees for 12 minutes.
